Zesty Lime Sauce with Salmon

This dish combines salmon steaks with a zesty lime sauce consisting of stock, Thai fish sauce, butter and lime zest and juice.

4 Steaks Main Boil, Grill 30 mins to 1 hour

Ingredients:

  • 680g pack frozen salmon steaks, defrosted
  • 284ml tub fresh fish stock
  • 1½ x 5ml spoons Thai fish sauce
  • grated zest and juice of 1 lime
  • 15g unsalted butter
  • ½ small red onion, finely chopped
  • 17g pack fresh flat leaf parsley, finely chopped

Method:

Cook the salmon as per pack cooking instructions.

In the meantime, prepare the sauce by putting the stock, Thai fish sauce and grated zest and juice of 1 lime in a pan over a high heat and bring to the boil.

Whisk in the butter, ensuring it is totally melted before adding the chopped onion and parsley.

Place the salmon on plates and drizzle over the sauce, garnish with lime wedges and serve immediately.
