Wood roasted salmon with apple and macadamia
A good entree which also makes and an acceptable main meal

Ingredients
- 2 x 200g packs Regal Wood Roasted Salmon - Natural
- 150g Apple, cut into match sticks
- 2 tablespoons toasted macadamia nuts (roughly chopped)
Dressing
- 1 teaspoon Dijon mustard
- 2 teaspoons cider vinegar
- 1 Apple
- 1 tablespoon extra virgin olive oil
Method
1. Cut the wood roasted salmon into 100g portions and gently pan fry for approximately 1 minute each side.
Dressing
1. Juice the apple, keep pulp and mix together. Whisk together with other dressing ingredients.
2. Mix the apple sticks and macadamia together gently with a little dressing.
3. Place the salmon on a warm plate, place a small pile of the apple on top.
4. Drizzle the remaining dressing around the salmon, garnish with light fresh herbs if you wish (eg chervil, Italian parsley
