Whole baked Thai style Regal Salmon

Ingredients
- 1 - 1 1/2 kg whole Regal Salmon
- 1 red chilli seeded
- handful of fresh basil leaves
- handful of fresh coriander leaves
- 2 kaffir lime leaves shredded
- 2 soft inner stalks lemon grass
- ground black pepper to taste
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 2 bay leaves
- 1 lime or lemon sliced
Method
1. Diagonally slash the flesh of the Regal Salmon 2 - 3 times on each side.
2. Place the chilli, basil leaves, coriander leaves, kaffir lime leaves, chopped lemon grass stalks, and ground black pepper in a food processor and pulse the ingredients to a pulp.
3. Add the lemon juice and oil and continue to process to a coarse paste. Adjust the taste to your liking.
4. Smear and rub the mixture over and into the salmon. Place the salmon into an oiled roasting pan.
5. Place the bay leaves and citrus slices into the salmon. Spray the salmon with olive oil spray.
6. Roast in a preheated oven at 200oC for approximately 30 minutes. The fish will be slightly crispy on the outside.
7. Serve with noodles and a crisp salad.
