Ingredients

  • 225g Ardtaraig Smoked Salmon trimmings
  • 200g mixed salad leaves
  • 5 tablespoons virgin olive oil
  • 100g small button mushrooms
  • 6 spring onions finely chopped
  • 2 ripe avocadoes peeled and sliced
  • 2 tablespoons tarragon vinegar
  • 3 tablespoons dry sherry or white wine
  • Salt and freshly ground pepper

Method

Pile salad leaves onto a serving dish. Heat oil in large frying pan and add mushrooms, spring onions and toss together for 2 - 3 minutes. Add the salmon and avocado and cook for further minute, tossing the pan several times. Add the vinegar and white wine. Bring to the boil and quickly spoon over the crisp leaves.
