Vodka and Lime Salmon Fillets with Citrus Cous Cous

A different yet satisfyingly delicious Vodka and lime dish consisting of salmon fillets, chilli, tomatoes, onion and citrus cous cous.

Ingredients:

  • 4 x 125g salmon fillets
  • 2 x 15ml spoons vodka
  • juice and zest of 2 limes
  • 1 chilli, de-seeded and finely diced
  • salt and freshly ground black pepper
  • 4 x slices of lime to decorate
  • 250g cous cous
  • vegetable stock to make up cous cous
  • juice and zest of 1 lime
  • 3 x tomatoes, skinned, de-seeded and finely diced
  • red onion, finely chopped
  • 20g pack fresh parsley, finely chopped
  • salt and freshly ground pepper

Method:

For the vodka, lime and chilli salmon Preheat the oven to 200°C, 400°F, Gas mark

6. Lightly oil a square of foil and place the salmon fillets in the centre. Add lime juice, zest, vodka, chopped chilli and seasoning. Decorate each fillet with a slice of lime. Seal the foil into a parcel and place on a baking tray. Cook in the centre of the oven for 25 minutes.

For the cous cous Make up the cous cous according to the pack instructions using vegetable stock. Stir through the other ingredients and season. Serve the salmon with all its juices on a bed of cous cous.
