Tinned Salmon and Sweetcorn Fishcakes

Red salmon comes together with sweetcorn, chilli powder and potatoes to form this exquisite meal.

Ingredients

  • 1 x 418g (14 1/2oz) tin of red salmon
  • 1 x 340g (12oz) sweetcorn
  • 675g (1 1/2lb) boiled potatoes
  • 60g (1oz) butter
  • salt
  • cayenne or chilli powder

Method

Mash to boiled potatoes and add the butter. Stir in the drained sweetcorn and salmon.

Season with salt and cayenne or chilli powder. Mould into rounds and fry each in melted butter for approximately 10 minutes or until golden on each side.
