Thai Regal Salmon filo parcels

Ingredients
- 1 teaspoon grated fresh ginger
- 1 grated lime zest
- juice of 1 lime
- 1 clove garlic crushed
- 1 tablespoon fresh coriander chopped
- 1 spring onion finely sliced
- 25 grams butter
- 4 sheets filo pastry
- 200 grams Regal Wood Roasted Salmon
- salt
Method
1. Pre heat oven to 190C.
2. In a small bowl mix together ginger, lime zest, garlic, coriander
3. Stir in lime juice.
4. Melt butter and brush 1 sheet of filo, lay another on top and brush the surface with butter.
5. Position half the salmon near to one end of the filo, season with salt and pepper, then spread 1/2 the lime and herb mixture on top.
6. Fold short end over salmon then fold long sides inwards, fold over twice more and trim any surplus.
7. Place on a baking tray and bake for 10 - 15 minutes until golden brown. Garnish with sprigs of coriander and lime wedges.
Serving suggestion:
1. Serve with an Asian dipping sauce and bok choy sauteed in oyster sauce.
