Thai Coated Salmon Filo Parcels
Succulent Thai style salmon parcels with spring onion, ginger, coriander and lime juice.

Ingredients
- 4 pieces of salmon fillet
- 1 tsp green Thai paste
- 4 sheets filo pastry
- 4 chopped spring onions
- 2 tsp grated ginger
- some coriander, chopped
- juice of 2 limes
- melted butter
Method
Mix the green Thai paste with the chopped spring onions, grated ginger, chopped coriander and the lime juice.
Brush the sheets of filo pastry with melted butter and fold in half. Place a spoon of mixture onto the pastry with a piece of salmon fillet on top. Pour over the left over juice. Wrap the salmon pieces in the pastry. Brush with more melted butter and cook in a hot oven until golden brown.
