Teriyaki Salmon Fillet
Scrumptious noodles with marinaded salmon fillet, peppers, cougette, ginger and coriander.

Ingredients
- 480g pack fresh salmon fillets
- 1 red pepper, deseeded and sliced
- 1 green pepper, deseeded and sliced
- 1 courgette, topped, tailed and sliced
- 2cm piece fresh root ginger, peeled and grated
- 150ml teriyaki marinade
- 15ml spoon fresh coriander, finely chopped
Method
Place the salmon, pepper, courgette and ginger into a shallow non-metallic dish. Pour over the marindae and cover.
Set aside for 30 minutes turning once, halfway through.
Heat a frying pan over a moderate heat. Lift out the salmon from the marinade. Cook the salmon for 14-16 minutes turning halfway through cooking. Add the peppers, cougette and ginger for the final 5 minutes of the cooking time.
Remove the salmon and vegetables from the frying pan. Pour the marinade in the pan and bring to the boil for 1 minute.
Serve the salmon and vegetables and accompany with freshly cooked noodles.
Garnish with coriander and serve immediatley.
