Sweetcorn and Courgette Fritters with Smoked Salmon

Ingredients
- 1 x 198g tin sweetcorn, drained
- 1 courgette, grated
- 4 slices smoked salmon
- 100g plain flour
- 1/2 x 5ml bicarbonate of soda
- 1 egg
- 1 x 5ml spoon salt
- 100ml milk
- knob of butter
- crème fraîche
Method
Whisk seived plain flour, bicarbonate of soda, egg, salt and milk.
Stir in grated courgette and drained sweetcorn and season with pepper.
Melt butter over a low heat and add 1 spoonful of the mixture to make thick pancakes approximately 4 inches wide. Cook on both sides, remove and top each with smoked salmon and 1 tablespoon of crème fraîche.
The fritters are also good with sweet chilli sauce.
