A delicious Smoked Salmon Salad with apple, kiwi, almonds, soured cream and mint.

Ingredients

  • 227g pack Scotch smoked salmon trout
  • 1 red eating apple, cored and chopped
  • 3 kiwi fruit, peeled and sliced
  • 50g toasted flaked almonds
  • 3 x 15ml spoons soured cream
  • 3 x 15ml spoons freshly chopped mint
  • salt and freshly ground black pepper
  • fresh watercress to garnish

Method

Cut the trout into bite-sized pieces and place in a bowl with the apple, kiwifruit, almonds, soured cream, mint, and seasoning, to taste.

Mix well and serve immediately on a bed of watercress.
