Smoked Salmon, Tarragon and Rocket Sandwich
A delicious sandwich containing smoked salmon, tarragon, rocket and cream cheese.

Ingredients
- 100g cream cheese
- 8 slices of thick granary bread
- 200g smoked salmon
- 15g pack tarragon, (strip the stalks and chop the leaves)
- 40g pack rocket
- juice of one lemon
- freshly ground black pepper
Method
Spread the cream cheese onto four slices of bread.
Arrange the smoked salmon on top and sprinkle with tarragon.
Add the rocket, sprinkle with lemon juice and grind over some fresh black pepper.
Top with the remaining four slices of bread and cut in half diagonally.
Serve.
