Ingredients
- 225 g / 8 oz smoked salmon thinly sliced
- 1 fennel bulb, thinly sliced
- 1 medium cucumber, seeded and cut into julienne strips
- 2 tbsp fresh lemon juice
- 120 ml extra-virgin olive oil
- 2 tbsp fresh chopped dill
- A few sprigs of dill for garnishing
- Ground black pepper
- Caviar or lumpfish roe to garnish (optional)
Method
1. Arrange the salmon slices on four individual plates.
2. Decoratively arrange the slices of fennel on top, then sprinkle over the cucumber julienne strips.
3. Mix the lemon juice with pepper to taste in a small bowl.
4. Gradually whisk in the olive oil to make a creamy vinaigrette. Stir in the chopped dill.
5. Spoon a little vinaigrette over the fennel and cucumber.
6. Drizzle the remaining vinaigrette over the smoked salmon and garnish with sprigs of dill.
7. Top each salad with a spoonful of caviar, if you like.
