Smoked Salmon Pinwheels

A delicious combination of Smoked Salmon, curd cheese, capers and lemon juice.

24 Smoked Salmon Snack Uncooked Less than 30 minutes

Ingredients:

  • 250g (9oz) smoked salmon, thinly sliced
  • 250g (9oz) curd cheese
  • 2 tbsp capers, finely chopped
  • a splash of lemon juice
  • salt and freshly ground black pepper

To serve:

  • 1 jar of salmon roe
  • sprigs of dill, optional

Method:

Trim the smoked salmon and cut the slices into strips 2.5cm (1 inch) wide and 6cm (2 ½ inches) long.

Chop the trimmings and mix into the curd cheese with the capers. Season to taste with lemon juice, salt and pepper.

Spread the curd cheese over the strips of salmon and then roll each piece into a Swiss roll shape.

For freezing:

Lay side by side onto a piece of baking parchment in a firm plastic box. Cover with cling film and seal the box. Freeze until required.
