Smoked Salmon Parcels with Cucumber and Fennel Salad

Delicate Parcels of Smoked Salmon with Cucumber and Fennel Salad.

4 Smoked Salmon Salad Uncooked Less than 30 minutes

Ingredients:

  • 2 x 15ml spoons sherry vinegar
  • 3 x 15ml spoons extra virgin olive oil
  • large pinch of caster sugar
  • salt and freshly ground black pepper
  • 1 fennel bulb, finely chopped, including the fronds
  • 1 cucumber, peeled into thin strips with a potato peeler
  • 2 x 115g packs Taste the Difference smoked salmon parcels

Method:

For the dressing:

Stir together the sherry vinegar, olive oil, sugar and seasoning.

For the salad:

Add the fennel and cucumber to the dressing and coat well. Serve with the smoked salmon parcels.
