Ingredients
- 2 x 15ml spoons sherry vinegar
- 3 x 15ml spoons extra virgin olive oil
- large pinch of caster sugar
- salt and freshly ground black pepper
- 1 fennel bulb, finely chopped, including the fronds
- 1 cucumber, peeled into thin strips with a potato peeler
- 2 x 115g packs Taste the Difference smoked salmon parcels
Method
For the dressing:
Stir together the sherry vinegar, olive oil, sugar and seasoning.
For the salad:
Add the fennel and cucumber to the dressing and coat well. Serve with the smoked salmon parcels.
