Smoked Salmon, New Potato and Avocado Salad with a Creamy Dill Dressing
A gorgeous combination of salmon, potato, mayonnaise, creme fraiche, dill, avocado and cucumber.

Ingredients:
- 500g new potatoes
- 2 x 15ml spoons mayonnaise
- 2 x 15ml spoons creme fraiche
- ½ x 20g pack fresh dill, chopped
- 1 avocado, peeled, stoned and diced
- ½ x cucumber, peeled, deseeded and diced
- 230g pack or 2 x 125g packs smoked Scottish salmon - mild oak smoke flavour
- salt and freshly ground black pepper
Method:
Cook the new potatoes in lightly salted water for 15 - 20 minutes, until tender. Drain and cool. Mix together the mayonnaise, creme fraiche and dill and add to the potatoes with the avocado and cucumber. Cut the smoked salmon into strips and stir in with seasoning to taste.
