Smoked Salmon and Sweet Potato Pie

This tasty recipe can be made with sweet potato or regular potatoes giving you a chance to mix up different flavours and have it the way that you like it.

Ingredients

  • 1 kg sweet potatoes, peeled and cut into 3 cm dice
  • 120 g cream cheese with chives
  • 300 g smoked salmon
  • 300 g fresh unsmoked salmon
  • 2 tbsp semi-skimmed milk

Method

1. Preheat the oven to 190 ºC, 375 ºF, Gas 5.

2. Cover the potatoes with water, bring to the boil and cook for approximately 10 minutes or until soft.

3. Drain well and mash with 20 g of the cream cheese. Set aside.

4. Place the fish in a microwaveable dish with a teaspoon of milk, cover and microwave on high for approximately 5 minutes or steam for 8 – 10 minutes until just cooked.

5. Flake the fish and place into a large ovenproof dish. Mix the remaining cream cheese with the milk and spoon over the fish.

6. Top with the mashed sweet potato and cook for 20 minutes until the cheese is bubbling around the edge of the dish and the potato is browned.

[TIP - can be made with regular mashed potato too]
