Smoked Salmon and Radish Relish
Smoked Salmon salad with cucumber, onion, creme fraiche and Radish Relish

Ingredients
- 2 x 15ml spoons creme fraiche
- 2 x 15ml spoons sundried tomato paste
- ½ x 15g pack fresh parsley, finely chopped
- zest and juice of ½ lemon
- 125g pack smoked salmon, cut into strips
- ½ cucumber, cut in half, seeds removed and cut into cubes
- 150g pack radishes, topped, tailed and cut into match sticks
- 1 bunch salad onions, shredded
- freshly ground black pepper
Method
Mix together the creme fraiche, tomato paste, parsley and lemon.
Add the salmon, cucumber, radishes and salad onion and stir to combine.
Season to taste before serving.
