Smoked Salmon and Potato Patties

Ingredients
- 6 medium/large Potatoes – scrubbed
- ¼ teaspoon freshly ground pepper
- 2 tablespoons Onion – minced
- 2 tablespoons whole wheat flour
- 1 tablespoons fresh parsley – chopped
- 200 gram diced smoked salmon (remove brown meat if any)
- 4 tablespoons “crème fraice”
Method
Preheat the oven to 375F. Shred the potatoes coarsely. Mix with the onion, parsley, pepper, and flour.
Shape into 4 patties and place on a nonstick baking sheet.
Bake for 25-30 minutes.
Arrange smoked diced salmon on the patties.
Add “crème fraice”
Spread the chopped fresh parsley on the smoked salmon pattie.
Add salt & pepper to taste.
Serve with champagne and ice cold vodka.
