Ingredients

  • 225g (1 1/3 cups) mascarpone
  • 3 tbsp prepared horseradish
  • 2 tbsp finely chopped chives
  • Maldon sea salt
  • freshly ground black pepper
  • 500-550g (25-30 slices) Regal Cold Smoked Sliced Salmon

Method

1. In a small bowl place the mascarpone and one tablespoon at a time add the horseradish until it is hot enough for you. (We usually use 3 tablespoons).

2. Add 1/2 the chives and seasoning to taste.

3. Lay out salmon slices and place 2 teaspoons of horseradish cream onto one edge of each slice.

4. Roll up salmon to enclose cream and gently squeeze the cream.

5. Repeat with remaining salmon slices.

6. Dip one end of each roll in the remaining chives.

7. Cover and refrigerate until required
