Ingredients
- 4 fillets Shetland salmon
For the potato salad:
- 2 lbs Jersey Royal potatoes
- 50g good black olives, stoned and halved
- 20 mint leaves, chopped
- 4 tbsps baby capers, rinsed, dried and chopped
- 4 cloves good garlic, chopped
- 12 tbsps olive oil
- 1 tbsp dried oregano
