Ingredients

  • 4 fillets Shetland salmon

For the potato salad:

  • 2 lbs Jersey Royal potatoes
  • 50g good black olives, stoned and halved
  • 20 mint leaves, chopped
  • 4 tbsps baby capers, rinsed, dried and chopped
  • 4 cloves good garlic, chopped
  • 12 tbsps olive oil
  • 1 tbsp dried oregano
