Shanghai salmon and Broccoli in Black Bean Sauce
Stir-fried Salmon with Broccoli, Aspargus and Black Bean Sauce served on a bed of fried rice or noodles.

Ingredients
- 15ml spoon sesame oil
- 500g thick salmon fillet
- 250g pack tender-stem broccoli, sliced diagonally
- 100g pack asparagus tips, halved
- 200g jar black bean sauce
- 15ml spoon cold water
- a little fresh root ginger, grated
Method
Heat the sesame oil in a wok or frying pan, add the salmon and stir-fry carefully over a high heat for 1 minute.
Add the broccoli and aspargus tips with the black bean sauce, water and ginger.
Cover the wok or frying pan with a lid and simmer gently for 2-3 minutes until the vegetables are just tender.
Stir and serve immediately on a bed of fried rice or noodles.
