Seared Shetland Salmon with Walnuts and Thyme

Walnuts and thyme combine wonderfully in this simple salmon recipe.

Recipe Information:

Serves: Salmon Portion Course Cooking Method Preparation Time:
4 Fresh Salmon, Fillet Main Fry Less than 30 minutes

Ingredients:

  • 4 x 150g fillets of Shetland Salmon
  • 2 shallots, finely chopped
  • 75g walnut pieces
  • ½ tsp fresh thyme leaf
  • 1 glass of red wine
  • 275ml veal or brown Chicken stock
  • 25g butter

Method:

For the sauce, in a dry pan fry the nuts and thyme to give a littlecolour, add the shallots and the wine. Reduce until almost dry,add the stock and reduce by half, finish with butter.

Sear the salmon on a hot pan for 2 minutes on each side, allow torest for 2 minutes and then serve with the sauce.
