Seared Salmon with Chilli Dressing
Salmon marinaded in lime juice, brown sugar and wine vinegar, served with Chilli Dressing.

Ingredients
- 700g pack 4 chunky salmon steaks
- juice 1 lime
- 15ml spoon brown sugar
- 15ml spoon white wine vinegar
- 3 x 15ml spoons olive oil
- 15ml spoon white wine vinegar
- 1 red chilli, deseeded and finely chopped
- 1 garlic clove, finely chopped
- pinch all spice
- juice ½ lime
Method
For the seared salmon: Place the salmon steaks in a non-metallic dish. In a jar combine together the lime juice, brown sugar and white wine vinegar, then brush over the steaks. Cover and marinade for 15 minutes in the fridge.
For the dressing: Place all the dressing ingredients in a clean screw top jar and shake to combine.
Heat a griddle pan or frying pan and cook the salmon steaks as per pack instructions.
Transfer to a serving plate, along with some steamed seasonal vegetables or salad. Drizzle over the dressing and serve immediately.
