Savoury Pinwheels
Smoked Salmon with ham, anchovies, bead and cheese.

Ingredients:
- 15 large slices wholemeal bread, 5mm thick, crusts removed
- 75g butter, softened
- 5 small slices smoked salmon
- 5 small slices Parma or smoked ham
- 4 anchovy fillets, chopped
- 50g cream cheese
- freshly ground black pepper to taste
- salad cress and tomato wedges to garnish
Method:
Flatten the bread slightly with a rolling pin, then spread with the butter. Cover 5 slices with smoked salmon and 5 slices with ham.
Beat the anchovies into the cheese and spread over the remaining bread. Season the fillings with pepper.
Roll the bread up, wrap each roll in clingfilm and chill for 20 minutes. Unwrap and cut each into 5 slices.
To freeze: Place in rigid containers, separating each layer with freezer layering tissue, cover, label and freeze.
To thaw and serve: Arrange in a single layer and leave at room temperature for 45 minutes. Serve garnished with cress and tomato wedges.
