Salmon with Yogurt and Pesto

Fried salmon fillets served on a bed of wild rocket and smothered with a yoghurt and pesto sauce. Particularly satisfying with served with roast potatoes.

Ingredients

  • 15ml spoon mild olive oil
  • 4 salmon fillets
  • 120ml Be Good To Yourself Greek style yogurt
  • 2 x 5ml heaped spoons fresh green pesto
  • 50g pack wild rocket

Method

Heat the oil in a large frying pan, place the salmon in the pan, top side down and cook until sealed, turn over and seal on other side. Reduce the heat and continue to cook for a further 15 minutes.

Remove the salmon from the pan and keep warm. Mix the yogurt and pesto together and place in a small dish to serve.

Serve the salmon with the rocket salad then drizzle over a little of the yogurt dressing and serve immediately.
