Salmon Tower
Salmon fillets fried then served on lightly toasted ciabatta bread topped off with a spinach and dill sauce.

Method
Heat the olive oil in a frying pan and saute the onions for 10 minutes, then add the sugar and white wine vinegar and saute for a further 5-10 minutes. Add the spinach and heat gently until wilted. Transfer to a plate and keep warm.
In the same frying pan cook the salmon fillets to seal (start with the skin side first).
Preheat a grill to a moderate heat and lightly toast the ciabatta slices on each side. Remove then place the salmon fillets under the grill and cook as per pack instructions.
Top the slices of ciabatta bread with some caramelised onion and spinach then a salmon fillet. Generously spoon over some of the dill sauce and serve immediately.
