Salmon Steaks with Orange and Whisky Butter Sauce
Salmon steaks fried in butter and then cooked with the orange and whisky sauce. A delicacy.

Ingredients:
- 2 x 15ml spoons plain flour
- Salt and freshly ground black pepper
- 350g pack 2 salmon steaks
- Grated zest and juice 1 orange
- 25g unsalted butter, softened
- 2 x 15ml spoon whisky
- baby new potatoes
- Mange tout
Method:
Mix together the flour and seasoning, then lightly dust the salmon steaks. Put to one side until needed.
In a bowl combine together the orange rind, butter and whisky to make a soft butter.
Heat half the butter in a frying pan and cook the salmon steaks for 5 minutes on each side.
Then add the orange juice, cover and simmer for a further 1-2 minutes. Finish with the remaining butter and serve with boiled new potatoes and mange tout.
