Salmon Steaks with Mustard Sauce
The salmon steaks are pan fried. The pan is then given an extra sizzle with mustard and vinegar before creme fraiche is added to the create a sumptuous sauce - a dish to die for.

Ingredients
- 25g butter
- 15ml spoon olive oil
- 4 salmon steaks
- 1-2 x 15ml spoons red wine vinegar
- 15ml spoon wholegrain mustard
- 3 x 15ml spoons creme fraiche
- salt and freshly ground black pepper
Method
Heat the butter and oil in a frying pan. Add the salmon steaks and cook over a moderate heat for 12-15 minutes, turning occasionally, until cooked through. Remove from the pan and keep warm.
Add the vinegar and mustard to the pan. Cook for 1 minute, stirring well to deglaze the pan.
Stir in the creme fraiche add seasoning, to taste, and heat through.
Pour the sauce over the salmon steaks and serve immediately.
