Salmon Steaks with a Champagne and Tarragon Sauce

A champagne and tarragon sauce tops this dish with its salmon steaks, new potatoes and sautéed leeks.

Recipe Information:

2 Fresh Salmon, Steaks Grill, Pan 30 mins to 1 hour

Ingredients:

  • 2 salmon steaks, seasoned
  • 150ml (5 fl oz) Champagne
  • 1 1/2 tbsp tarragon leaves, chopped
  • 35g (1 oz) butter
  • 1/2 onion, chopped
  • stalks from packet of tarragon
  • 150ml (5 fl oz) double cream

For serving:

  • New potatoes and sautéed leeks

Method:

Melt butter and sauté chopped onion and the stalks from the tarragon. Pour in Champagne and reduce to about half. Add double cream and strain.

Return to the pan and add chopped tarragon leaves. Simmer whilst grilling seasoned salmon fillets.

Serve with new potatoes and sautéed leeks.
