Salmon Savoury

Canned salmon straight from the tin and mixed with cheddar cheese, yoghurt and lemon juice. This delicious mix is then placed on top of a toast base and browned under a grill.

4 Canned Main, Snack Grill Less than 30 minutes

Ingredients:

  • 2 x 212g can salmon, drained and mashed
  • 250g Cheddar cheese, grated
  • 4 x15ml spoons natural low fat yogurt
  • 4 x 15ml spoons lemon juice
  • salt and freshly ground black pepper
  • paprika
  • 4 medium eggs beaten
  • 4 slices wholemeal bread, toasted and buttered
  • lemon wedges

Method:

Mix the salmon with the cheese. Stir in the yogurt and lemon juice. Season to taste with salt, pepper and paprika to taste.

Beat until well mixed, then beat in the eggs.

Prepare some toast.

Put the toast in a shallow flameproof dish and pile the salmon mixture on top. Place under a preheated low grill for 10 minutes or until the mixture is heated through, then increase the heat and grill for a further 5 minutes to brown the top. Serve immediately with lemon wedges.
