Salmon, Rocket and Avocado Mousse

A Smoked Salmon spread for toast, with Rocket, Avocado Mousse, low fat cream cheese, lemon juice and crème fraîche.

4 Smoked Salmon Snack Uncooked Less than 30 minutes

Ingredients:

  • 195g smoked salmon trimmings, chopped
  • 30g rocket, roughly chopped
  • 1 1/2 large avocados, peeled and chopped
  • 1 small tub low fat cream cheese
  • 1 small lemon
  • 1 1/2 x 15ml spoonscrème fraîche
  • salt and pepper
  • sprinkle of chilli

Method:

Place in a blender, the small tub of low fat cream cheese, avocados peeled and chopped, 110g of the smoked salmon trimmings, lemon juice, crème fraîche, salt, pepper and a sprinkle of chilli. Blend.

Stir in rest of the trimmings and rocket.

Chill and serve with hot toast or walnut bread.
