Salmon, Rocket and Avocado Mousse
A Smoked Salmon spread for toast, with Rocket, Avocado Mousse, low fat cream cheese, lemon juice and crème fraîche.

Ingredients
- 195g smoked salmon trimmings, chopped
- 30g rocket, roughly chopped
- 1 1/2 large avocados, peeled and chopped
- 1 small tub low fat cream cheese
- 1 small lemon
- 1 1/2 x 15ml spoonscrème fraîche
- salt and pepper
- sprinkle of chilli
Method
Place in a blender, the small tub of low fat cream cheese, avocados peeled and chopped, 110g of the smoked salmon trimmings, lemon juice, crème fraîche, salt, pepper and a sprinkle of chilli. Blend.
Stir in rest of the trimmings and rocket.
Chill and serve with hot toast or walnut bread.
