SALMON PROVENÇALE

Salmon baked with Garlic, Onions and Olives and a breadcrumb topping

Recipe Information:

6 Fresh Salmon Main, Savoury Bake, Fry Less than 30 minutes

Ingredients:

  • 1 tablespoon olive oil
  • 1 cup onions, sliced
  • 2 cloves garlic, minced
  • 12 black olives, pitted
  • 2 cups tomato sauce
  • 1 1/2 pounds boned and skinned cooked salmon
  • 1 ounce breadcrumbs

Method:

Preheat oven to 350 degrees. Heat the oil in a frying pan. Saute the onion over low heat until tender. Add the garlic and sliced olives. Simmer over medium heat for 5 minutes. Flake the salmon in a buttered baking dish. Pour the sauce over. Sprinkle with the breadcrumbs and bake for 15 minutes.
