Ingredients
- bag mixed herb salad or any bag prepared salad leaves
- 375g salmon fillet
- 250g baby new potatoes, cooked and sliced
- 3 x 15ml spoons vinaigrette dressing
- salt and freshly ground black pepper
Method
Place the salmon on a sheet of lightly oiled foil under a preheated moderate grill for 8-10 minutes until just cooked. Allow to cool then flake the salmon, discarding any skin and bones.
Place the salad leaves on a serving plate and arrange the potatoes and salmon over the salad. Drizzle over the dressing just before serving and season to taste.
