Salmon Pasta Salad

Boneless salmon fillets and dried farfelle pasta with cherry tomatoes and a vinaigrette dressing.

Ingredients

  • 15ml spoon oil
  • 400g pack boneless salmon fillets
  • 200g dried farfalle pasta
  • ½ x 250g punnet cherry tomatoes, halved
  • 20g pack flat leaf parsley, finely chopped

Method

Heat the oil in a frying pan, then cook the salmon on a medium heat for approximately 10 minutes or until flakey. Flake off the skin and put to one side, discarding the skin.

In the meantime cook the pasta as per pack instructions, then refresh under cold running water.

Place the pasta and salmon in a large serving bowl then add the vinaigrette, tomatoes and parsley. Mix to combine then serve on individual plates.
