Salmon Parcels with Watercress Sauce
Salmon steaks baked with lemon and onion then served with a watercress sauce that includes fromage frais and dill.

Ingredients
- knob butter, melted
- 2 onions, sliced
- sprigs of fresh dill
- 4 salmon steaks
- salt and freshly ground black pepper
- 1 lemon
- 40g butter
- 175g virtually fat free fromage frais
- 75g pack of fresh watercress, finely chopped
Method
Preheat the oven to 180°C, 350°F, Gas Mark 4.
Brush 4 sheets of foil with melted butter.
Divide the onion between each piece of foil, and place a sprig of dill on the onion.
Place one salmon steak on top of the onion and dill and squeeze over the lemon juice.
Add seasoning to taste and a knob of butter.
Wrap the foil around the fish to form a parcel and place on a baking tray in the preheated oven for 20-25 minutes.
Meanwhile, pour the fromage frais in a bowl and stir in the chopped watercress with seasoning to taste.
Remove the salmon from the foil and serve with the sauce and new potatoes.
