Smoked Salmon, Mascarpone and Caramelised Red Onion with Penne Pasta

4 Smoked Salmon Main Bake 30 mins to 1 hour

Ingredients:

  • 2 red onions, peeled and sliced
  • 2 x 15ml spoons olive oil
  • 2 x 15ml spoons balsamic vinegar
  • salt and freshly ground black pepper
  • 250g dried pasta
  • 125g pack smoked salmon, cut into strips
  • 250g tub mascarpone cheese

Method:

Preheat the oven to 200°C, 400°F, Gas Mark 6.

Place the onions in a roasting tray, sprinkle over the oil and balsamic vinegar. Cover and place in the oven for 40 minutes.

Fifteen minutes before the end of the cooking time, bring a large pan of salted water to the boil and cook the pasta for 9-11 minutes, or until al dente.

When the pasta is cooked, drain and return to the saucepan.

Stir in the salmon, mascarpone and roasted onion. Season to taste and serve immediately.
