Salmon, Leek and Potato Rösti
Grilled salmon fish cakes with potato, leek and lemon juice.

Ingredients
- 225g (8oz) cooked salmon, flaked
- 2 leeks
- 3 potatoes
- lemon juice
- salt
- cayenne pepper
- butter for frying
Method
Boil the potatoes until slightly under cooked and then grate. Slice and sautée the leeks, add to the potatoes with the cooked salmon, flaked. Season with plenty of lemon juice, salt and cayenne pepper.
To cook the slamon fillets season them and baste lightly with lemon juice. Place under a medium grill for 5-10 minutes or until cooked.
Mould into 4 rounds and fry each in melted butter for approximately 10 minutes or until golden on both sides.
