Ingredients
- Salmon (to suit number of servings)
- 5 oz single cream
- Juice of 1 lemon
- tbsp fresh breadcrumbs
- 1 tbsp chives
- a little melted butter
- 1 tbsp chopped parsley
Method
1. Preheat oven to 180 0C; 350 0F; Gas 4
2. Lay salmon in a shallow buttered dish. Sprinkle over with the lemon juice, herbs and 1 tbsp water.
3. Cover with foil. Cook in the oven for 10 –15 minutes until tender.
4.Heat the cream gently and pour over the fish.
5. Sprinkle with melted butter and brown under a hot grill.
