Ingredients
- 15 g butter
- 1 onion, finely chopped
- 400 g salmon, minced or chopped
- ½ red pepper finely chopped
- 50 g cream cheese, softened
- 100 g fresh breadcrumbs
- 2 tbsp chopped fresh chives
- ½ tsp paprika
- 1 tbsp garlic powder (optional)
- Plain flour, for coating
- Sunflower oil, for shallow frying
Method
1. Melt the butter and sauté the onion and pepper for 3 – 5 minutes. Allow to cool then stir in the minced fish, cream cheese, breadcrumbs, chives, paprika and garlic. Mix together well.
2. Form the mixture into 4 patties, toss in a little flour to coat, and refigerate until firm.
3. Heat a little oil in a frying pan and cook the salmon cakes for about 8 – 10 minutes, turning once until golden and cooked through.
4. Place onto kitchen towel to soak up any excess oil. Serve immediately.
