Method
Preheat the oven to 200°C, 400°F, Gas Mark 6.
Place the salmon fillets in an ovenproof dish. Spread the couscous over the salmon and pour the wine and oil around the fish.
Bake in the oven for 20-25 minutes.
Place a salmon fillet in the centre of 6 dinner plates and drizzle with a little of the cooking liquid. Sprinkle over the chopped basil. Serve with the crispy vegetables.
