Salmon Fillets with Herb Oil

Salmon fillets marinated for 15 minutes then griddled or fried. Served with potatoes and green beans seasoned with finely chopped lemon thyme.

Ingredients

  • 125ml extra virgin olive oil
  • 20g pack lemon thyme, finely chopped
  • salt and freshly ground black pepper
  • 4 salmon fillets
  • 500g pack new potatoes
  • 200g pack fine green beans

Method

Pour 100mls oil into a shallow dish add half the chopped lemon thyme and some seasoning. Place the salmon fillets into the dish and turn each to ensure an even coating of oil and herbs.

Cover and leave to marinate in the refrigerator for 15 minutes.

Cook the potatoes in lightly salted boiling water until soft to the point of a knife, then drain.

Mix the remaining oil and chopped thyme together and put to one side to allow the flavours to develop.

Heat a griddle or frying pan until hot then add the salmon fillets. Cook according to pack instructions.

Cook the green beans in boiling water until tender then drain.

Just before the salmon fillets are cooked, crush the new potatoes with the back of a spoon and drizzle over the herb oil. Place a lid on the saucepan and shake the pan to coat the potatoes with oil and herbs.

Serve the salmon fillets on a bed of crushed potatoes and green beans.
