Salmon and Spinach Pasta

Salmon (which can be microwaved), tagliatelle and spinach smothered in a creamy sauce and topped with shaved parmesan cheese.

4 Fresh Salmon, Fillet Main Microwave, Pan Less than 30 minutes

Ingredients:

  • 400g salmon fillets
  • 250g egg tagliatelle
  • 100g pack creamery cheese
  • ½ x 250g pack spinach
  • ½ x 20g pack tarragon or dill, finely chopped
  • 25g parmesan cheese, shaved using a potato peeler

Method:

Cook the salmon fillets either in the microwave or oven as per the pack instructions. Put to one side to cool then remove the skin and any bones and flake.

Cook the pasta according to the pack instructions then drain the water from the saucepan.

Add the creamery cheese to the saucepan along with the spinach. Cover the saucepan with a lid and cook gently until the spinach has wilted.

Stir in the chopped tarragon or dill. Transfer to serving plates and serve garnished with the parmesan shavings.
