Salmon and Prawn Brochettes

A perfect seafood dish for your barbecue - Cubed salmon, tiger prawns and baby tomotoes on a scewer. This dish can also be prepared under the grill.

Recipe Information:

Serves: Salmon Portion Course Cooking Method Preparation Time:
4 Fresh Salmon, Fillet Main Barbecue, Grill Less than 30 minutes

Ingredients:

  • 225g (8oz) salmon, cubed
  • 12 raw tiger prawns
  • 1/2 punnet baby tomatoes
  • olive oil
  • handful fresh basil, chopped
  • 1 clove garlic, crushed
  • chilli flakes, optional

Method:

Thread the long skewers with cubed bits of salmon, raw tiger prawns and baby tomatoes. Brush with olive oil that has been mixed with a handful of chopped fresh basil and crushed clove of garlic.

Barbecue or grill, turning once for approximately 5 minutes.

Serve as a main dish with rice or with salad at the barbecue.
