Smoked Salmon with Cashew Nuts and Black Olives

Ingredients
- 200g Flaky Smoked Salmon
- 100 g Benecol cheese spread
- 50 g uncooked unsalted cashew nuts
- 8 black olives.
Method
Slice the olives, break up the cashew nuts and mix them into the Benecol cheese. Cut the Flaky Smoked Salmon into 2, put onto serving plates and put the mixture on top. Serve with iceberg lettuce or buttered asparagus, a slice of rustic wholemeal bread and a glass of red wine. Delicious and very healthy!
