Salar Flaky Smoked Salmon with Mashed Potatoes
Baked Smoked Salmon, Mashed Potatoes and Parmesan mounds

Ingredients
- Potatoes for 4 people
- 600g Flaky Smoked Salmon
- olive oil
- paprika
- black pepper from the mill
- parmesan cheese freshly grated
Method
Prepare enough mashed potato for 4, make the mixture rather dry. Wipe an ovenproof dish lightly with olive oil. Put half the mashed potato into the dish in a layer and sprinkle lightly with paprika and freshly milled black pepper. Cut the Flaky Smoked Salmon into 4 equal portions and put them onto the mashed potato, evenly spaced out. Put the remainder of the mashed potato into the dish, mounding it over the Flaky Smoked Salmon. Top with parmesan cheese and cook in the top of a hot oven (200ºC) for 5 – 7 minutes, long enough to brown the parmesanned mounds.
Serve with a green salad.
