Smoked Salmon and Cod with White Beans and White Wine

Ingredients
- 1 medium onion
- 2 tablespoons olive oil
- 1 red pepper
- 1 teaspoon paprika
- 60 ml white wine
- 1 400g can of cannellini beans
- 375 ml vegetable or fish stock
- 500g cod fillet cut into 4 pieces
- 250g Salar Flaky Smoked Salmon broken into chunks
- 1 clove garlic
- 1 handful of chopped flat leaf parsley
- grated rind of 1 lemon
Method
Chop the onion finely and sweat in the oil until soft. Chop the red pepper, add to the onion with the paprika and saute until soft. Pour in the white wine and reduce by half. Add the cannellini beans and the vegetable stock and simmer for 15 minutes. Season the cod fillets, add to the pot and simmer over a low heat until just cooked. Towards the end of the cooking time add the Flaky Smoked Salmon to the bean mixture in the pan. Crush the garlic and mix with the chopped parsley and lemon rind. Stir into the bean mixture being careful not to break up the fish. Season with black pepper and salt if necessary.
Excellent served with new potatoes coated with butter and freshly chopped parsley!
