Ingredients
- Wholemeal bread
- two avocados
- salt & pepper
- lime juice, double cream
- cucumber (very thinly sliced)
- Salar Flaky Smoked Salmon
- dill
- Shredded lettuce
- cubed avocado
- red grapefruit segments
- all sprinkled with a mixture of oil
- lime juice
- honey
Method
1. Toast the bread and when cold cut it into rounds using a scone cutter. 2. Peel and mash 2 avocados, season with salt and pepper. 3. Whip the double cream and add to the avocado mixture until a light spongy texture is achieved. 4. Pile 2 or more spoonfuls of the avocado mixture over the toast, still inside the scone cutter. 5. Arrange very thinly sliced cucumber over this and top with pieces of Flaky Smoked Salmon and dill. 6. Gently remove the cutter and serve with the salad - a winner!
